Salmon Mashed Potatoes Recipe

Ingredients

• 1/2 cup milk
• 1/4 cup chopped fresh parsley
• 1/4 cup chopped fresh chives
• 1/4 cup unsalted butter
• 1 pound Yukon Gold potatoes, peeled and cubed
• Season with salt and pepper to taste
• 1 pound salmon fillet (skin removed)

• Cook Time: 20 minutes

Instructions

• Preheat the oven to 400°F.
• Place the salmon fillet on a baking sheet that has been lined with parchment paper.
• Season the salmon to taste with salt and pepper.
• Bake for 15-20 minutes, or until salmon is cooked through.
• Meanwhile, boil the potatoes in a large pot of salted water for 15-20 minutes, or until tender.
• Return the potatoes to the pot after draining.

• Mash the potatoes with a potato masher or fork until smooth and well combined.
• Fold the cooked salmon into the mashed potatoes in small pieces.
• If desired, season with additional salt and pepper.
