Instructions

  • Combine grated potatoes, eggs, flour, milk, sour cream, salt, and black pepper in a large mixing bowl.
  • Mix thoroughly until the batter is smooth.
  • In a nonstick skillet over medium-high heat, melt the butter.
  • Spread about 1/4 cup of the batter evenly into the pan.
  • Cook for 2 minutes, or until the bottom turns golden brown.
  • Cook for another minute after flipping the crepe.
  • Repeat with the rest of the batter.
  • Serve warm, topped with a dollop of sour cream.
