• 1 potato, peeled and grated
• 2 eggs
• Season with salt and pepper to taste
• 1/4 onion, finely chopped
• 2 slices bacon

Instructions

• Cook bacon in a skillet over medium heat until crisp.
• Set aside after removing from skillet.
