  • Total Time: 25 minutes

Instructions

  • Cook bacon in a skillet over medium heat until crisp.
  • Set aside after removing from skillet.
  • Grated potato and onion should be added to the bacon grease in the skillet.
  • Season with salt and pepper to taste.
  • Cook for 10 minutes, or until browned and crispy.
  • Place the hash browns on one side of the skillet and two eggs on the other.
  • Fry the eggs until done to your liking, about 2-3 minutes for over-easy.
  • Serve the hash browns with the fried eggs and crumbled bacon on top.
